Ingredients: 

2 airline chicken breasts
1 leek
1/2 cup good chicken stock
1/4 cup dry white wine
2 T unsalted butter - halved
1 T olive oil
2 sprigs fresh thyme
1 clove garlic- minced
kosher salt and fresh ground black pepper
