CHICKEN SPAGHETTI

THIS IS MY FAVORITE CHICKEN SPAGHETTI RECIPE

Ingredients
• 1 (16 ounce) package spaghetti
• 1 (10.75 ounce) can condensed cream of chicken soup
• 1 pound processed cheese; cubed (Velveeta)
• 1 (10 ounce) can diced tomatoes with green chile peppers (Rotel)
• 1 cup chopped green onion
• 1 ½ C chicken broth
• 1 C shredded cheddar cheese
• 4 skinless, boneless chicken breast halves – seasoned, boiled, cut into bite size pieces

    1.      Cook chicken and shred or cut for recipe

    2.      Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.

    3.      Heat soup and broth in a large saucepan over low heat. Add cheese and melt, stirring. When cheese is almost melted, stir in tomatoes with green chile peppers and green onion.

    4.      Add spaghetti and mix well, then stir in chicken.

    5.      Place in greased 9x13 pan

    6.      Cover with shredded cheese

    7.      Bake 20 minutes at 350

    Crock Pot Version: I recently made this in my crock pot with pretty good results. I sprayed an 8 quart crock pot with non stick spray. I prepared the chicken spaghetti as above, but adding some additional chicken broth. You want the mixture to be a bit soupy so it doesn't dry out while cooking. Set your crock pot on low and cook for 2-3 hours.
