Chicken & Wild Rice Soup

Ingredients: 

3 14 oz cans chicken broth
2 chopped carrots
1/2 cup wild rice, rinsed and drained
1/2 cup chopped celery
1 chopped onion
2 tbsp butter
1/4 cup all purpose flour
1/4 tsp salt
1/4 tsp pepper
1 cup whipping cream
2 cups chopped cooked chicken

Serve with chives and slices of baguette


  1. In a 4 quart dutch oven, combine 2 cans of broth, carrot, wild rice, celery and onion. Brint to boiling; reduce heat. Cover and simmer for 35 to 40 minutes or until rice is tender but stell chewy.
  2. Meanwhile, in a saucepan, melt butter over med heat. Stir in flour, salt, pepper. Add remaining 1 can of broth. Cook and stir till thick and bubbly. Cook an stir 1 minute more. Stir in cream.
  3. Add cream mixture to wild rice mixture, stirring constatnly. Stir in chicken, heat through. Garnish with chives and serve with bread.
