Chocolate Cupcakes (16 cakes)

Ingredients: 

175g Self Raising Flour
2 tbsp Cocoa Powder
1 tsp Bicarbonae of Soda
150g Caster Sugar
2 tbsp Golden Syrup
2 No. Medium Sized Eggs
150ml Sunflower Oil
150ml Milk

Icing:
200g Unsalted Butter
450g Icing Sugar
8tbsp Cocoa Powder
Milk or Warm Water


  1. Take butter & eggs out of fridge.
  2. Preheat oven to 180°C/350°F/Gas Mark 4.
  3. Put cupcake cases in cake baking trays.  
  4. Sieve Flour, cocoa & bicarbonate of soda into a bowl.
  5. Add sugar & mix well.
  6. Beat eggs in mug.
  7. Make a well in the centre of the mixture & add syrup, eggs, oil & milk & beat well until smooth.
  8. Spoon two icecream scoops of the cake mixture into each cupcake case & bake for 15-18 mins until risen & firm to the touch.
  9. Remove from oven & leave to cool in cupcake baking tray for 5mins before turning out onto cooling rack.
  10. Place butter in bowl to make icing & beat until soft.
  11. Gradually sift & beat in the icing sugar & then add enough milk/water to make the icing spreadable.
  12. Sift & beat the cocoa powder into the icing.
  13.  Put icing in piping bag and pipe in a swirl on top of each cupcake.
