2 navel oranges
6 eggs
200g ground almonds
250g caster sugar
60g cocoa
1/2 tsp baking soda
1 tsp baking powder
Boil oranges whole, covered in water for 2 hours or until soft. Once cooked, leave to cool. Cut in large pieces and blitz in the food processor skin, pith and all - completely whole, until finely chopped.
Can microwave the oranges with a little water for 15 mins, turn over and microwave a further 15 mins. Leave in bowl to cool!
Beat eggs and caster sugar well in a large mixing bowl until frothy. Add almond meal and cocoa alternatively.
Finally add baking soda, baking powder & oranges. This should form a thick batter.
Bake in a 20cm spring loaded cake tin at 180 for 20 mins. Reduce heat to 150 and cook another 20 - 30 mins or until skewer comes out clean.
Cool on cake rack then dust with icing sugar or ice.
Serve with chocolate sauce and cream/ice cream for a dessert.
