1 cup white sugar
1 tsp vanilla extract
1/2 cup vegetable oil
2 cups flour
1/3 cup cocoa
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
3/4 cup buttermilk
2 cups shredded zucchini, well drained
Preheat oven to 350 F
Grease and flour cake pan/muffin pan
Beat together eggs, sugar and vanilla
Pour in oil
Combine dry ingredients
Mix together dry ingredients and egg mixture
Then add buttermilk
Fold in zucchini
Bake 30 mins for muffins or 55-60 mins for cake
