Chunk Sweet Pickles

These are made the old school way and they are well worth the effort. You will need 15 days to make these pickles. I won first place at the New Mexico State Fair with these pickles five years in a row. Very
sweet and crunchy!

Ingredients:

75 small pickling cucumbers
2 cups pickling salt
6 cups vinegar
5 cups sugar
1/3 cup pickling spice
1 Tbl celery seed

  1. Make a brine of 2 cups salt to1 gallon water. Boil and pour over the
    cucumbers in a crock.  Weigh down with a plate to keep cucumbers submerged.
    Let stand 1 week.  In hot weather skim daily.
  2. 2. After 1 week, drain the cucumbers and cut into chunks.  Put back into
    crock.  For the next 3 mornings make a boiling hot solution of 1 gallon
    water and 1 TBL powdered alum and pour over the pickles.
  3. 3. Do this fresh for 3 mornings.
  4. 4. On the 4th morning drain from the alum water and then heat 6 cups
    vinegar, 5 cups sugar, 1/3 cup pickling spice and 1 TBL celery seed to
    boiling point and pour over the pckles.
  5. 5. On the 6th morning, drain liquid, add 1 cup sugar, heat and pack the
    pickles into sterile jars.  Pour this liquid over until the jars are filled.
    Seal while hot.
