Cinnamon-Thyme Sweet Potatoes

Ingredients: 

1 Sweet Potato, peeled and cut into ½-inch circles
2 tablespoons butter or cooking oil
Cinnamon, to taste
Thyme, to taste


1.  Peel and cut sweet potato.

2.  Start a medium cooking pot of water to boil.  Once boiling, salt water and boil sweet potatoes for 4-6 minutes, until nearly tender.

3.  Drain potatoes and shock in a bowl of ice water. .  Set potatoes aside or save for later use.

4.  Once ready to cook potatoes, heat butter or cooking oil over medium heat in a saucepan.  Add potatoes and cook for 1-2 minutes, then add desired amount of cinnamon.  Stir and continue cooking.

5.  Cook sweet potatoes until fairly tender but not falling apart.  Take off heat and put inside a bowl, then sprinkle with thyme and mix.

6.  Serve immediately and enjoy.
