1stick butter, room temperature
2 large eggs
1 tbs vanilla
1 cup coconut, shredded
2 cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1 container yogurt, about 2/3 cup
2/3 cup milk
Preheat oven to 325F. Butter 9x5x3 inch loaf pan
Cream sugar and butter in a large mixing bowl until light and fluffy. Add eggs one at a time, beating well after each addition. Add vanilla.
In another bowl, mix together coconut, flour, baking powder, baking soda and salt.
Add dry ingredients to creamed mixture in 3 patches alternating with yogurt first then milk. Mix just until flour disappears.
Pour batter into prepared pan and bake 1 hour. Or until a toothpick inserted in the center comes clean. Set aside to cool on rack for 5 minutes. Remove from pan, invert into rack.
Spread jam and sprinkle icing sugar (optional). Or spread with butter and jam.
