Coconut Peppermint Bark

  • Blend 3 cups of unsweetened coconut shavings in a food processor for 10-20 minutes until creamy
  • Blend in 8 pitted medjool dates and 1/4 cup fresh mint leaves
  • Pour mixture onto wax paper
  • Sprinkle with cacao nibs 
  • Place in fridge and let set for at least 15 minutes
  • Cut into sections and enjoy!
