Coffee cupcakes with mocha fondant icing

Ingredients: 

For cakes
175g flour blend A or B
1.5 teaspoon baking powder
0.5 teaspoon xanthan gum
175g caster sugar
2 medium eggs, at room temperature
1 teaspoon vanilla extract
1 teaspoon glycerine
125ml semi-skimmed milk
125ml sunflower oil
2 tablespoons instant coffee dissolved in 1 tablespoon boiling water

For mocha icing
1 tablespoons instant coffee and 2 teaspoon cocoa powder dissolved in 1 tablespoon boiling water
150g fondant icing sugar
