Colettes: Raspberry Butter Sauce

Ingredients: 

Blanch garlic
Pinch of sugar
2 T raspberry vinegar
Water
 
Add vinegar= wine (chard or sauv.)
 
Cook until syrupy
Add ½ to 2/3 pounds butter
 
Served with Muscovy Duck Breast
