Crab Cakes

Ingredients: 

1 pound cooked crab meat
1 egg, lightly beaten
1 1/2 teaspoon Dijon mustard
Cayenne pepper to taste
2 tablespoons scallions, minced
2 tablespoons parsley. minced
6 tablespoons mayonnaise
2 tablespoons lemon juice
1 1/2 cups freshly made bread crumbs
(or cracker crumbs)
1/4 pound butter
1/4 cup vegetable oil


  1. Put the first 8 ingrediants in a large bowl. Mix well.
  2. Taste and correct seasoning.
  3. Pat crab mixture into 12 small cakes.
  4. Spread cakes on wax paper.
  5. Heat butter and oil in a large skillet over medium-high heat.
  6. Coat cakes in bread crumbs on all sides
  7. Fry until golden brown- 2 to 3 minutes on both sides.
