Crazy Good Campenelle and Sausage

Ingredients: 

1 lb homemade sausage (recipe below)
1 lb campenelle pasta
2 cans tomato sauce, 14.5 oz to 15 oz each
2 cloves garlic, minced
1 onion diced
1/2 tsp salt
1/2 tsp pepper
8 oz mozzarella cheese, sliced

For the sausage:

1 lb ground pork
1 TBSP red wine vinegar
1 tsp salt
1 tsp fresh ground pepper
1 tsp parsley
1 tsp garlic powder
1 tsp basil
1 tsp paprika
1 tsp red pepper flakes
1/4 tsp thyme
1/2 tsp oregano
