Creamy Baked Millet with Butternut Squash

Ingredients: 

4 small cloves garlic, roughly chopped
3 small shallots, thinly sliced
3/4 lb butternut squash, diced into 1/2 inch cubes
1/2 cup whole millet
1 cup water
1 cup whole milk
1/2 t salt
olive oil as needed
