Ingredients: 

6 ounces (about 7 slices) center-cut bacon, chopped
1 medium red onion, chopped
1 medium sweet red pepper, cored and chopped
1 bag (16 oz) frozen corn kernels, thawed
1/4 cup fresh parsley, chopped
2 large eggs plus 1 egg white
1/2 cup heavy cream
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon ground cumin
1 1/4 cups shredded sharp cheddar
1 teaspoon cornstartch
