Creamy Polenta

Ingredients: 

6 cups water
1 1/2 tsp. Salt
1 1/2 cup coarsely ground cornmeal
2 tbsp. butter - cut into large chunks
2 oz. parmesan - 1 cup grated


  1. Bring water & salt to a boil in a large saucepan
  2. Slowly add the cornmeal while whisking constantly in a circular motion to prevent clumping
  3. Bring to simmer, sitrring constantly
  4. Cover and reduce the heat to low
  5. Cook, stirring often and vigorously (make sure to scrape the corners of the pot) until the polenta becomes soft and smooth (about 30 minutes)
  6. Stir in the butter and 3/4 cup of the Parmesan
  7. Season with salt and pepper to taste. 
  8. Sprinkle with the remaning 1/4 cup permesan before serving.
