4 1/2 pounds pork leg in one piece
salt, to taste
1 teaspoon chicken bouillon granules
3/4 block of annatto
1/2 cup lime juice
1 cup water
4 tablespoons lard
1 piece banana leaf, washed and sliced in thick strips
Garnish Ingredients
3 purple onions, finely chopped
4 habanero chili peppers, finely chopped without seeds
1/2 cup lime juice
salt, to taste
Directions:
Rub the beef with salt to taste.
Use your blender to blend the annatto with the lime juice, water and bouillon granules. Pour the mixture in a separate container and add the meat. Let it marinate overnight.
Fry the onion with the lard and place it in your Crock-Pot Slower Cooker.
Add the meat and its marinade. Distribute the banana leaves over the meat.
Cover and cook for 6 to 8 hours on low or for 4 hours on high
Garnish Directions
Place ingredients on a dish and serve with the slow-roasted pork.
