Crustless Spinach-and-Mushroom Quiche

Ingredients: 

Disposable slow cooker liner
Nonstick cooking spray
1 10 ounce package frozen chopped spinach, thawed and well drained
4 slices bacon
1 tablespoon olive oil
2 cups coarsely chopped portobello mushrooms
½ cup chopped red sweet pepper (1 small)
1½ cups shredded Gruyere cheese or Swiss cheese (6 ounces)
8 eggs
2 cups half-and-half or whole milk
2 tablespoons snipped fresh chives
½ teaspoon salt
¼ teaspoon ground black pepper
½ cup packaged biscuit mix
