Curried Split Pea Soup

Ingredients: 

1 tbsp olive oil
1 onion, diced
3 cloves garlic, minced
1 tsp ginger
2 tsp curry
1 tsp cumin
1/4 tsp coriander
1/4 tsp cardamom
1/8 tsp cinnamon
2 tsp salt
2 cups broth
6 cups water
1 lb yellow split peas
1 carrot, grated


  1. In a stockpot saute onion and garlic in olive oil.
  2. Add garlic, ginger, spices and salt.  Saute for 2 more minutes
  3. Add water and broth and stir.  Add split peas and bring to a boil.
  4. Lower heat and simmer covered for an hour.  Add carrots half way through.
  5. Use a hand blender to cream to desired consistency.
