4 ounces Spanish chorizo, sliced 1/4-inch thick
3 pounds chicken thighs and breasts
Salt and pepper
2 red bell peppers, stemmed, seeded, and cut into 1/2-inch thick strips
2 small red onions, sliced
6 garlic cloves, thinly sliced
2 sprigs fresh thyme
3/4 cup dry sherry
1 cup cherry tomatoes, halved (or diced plum tomatoes)
2 teaspoons sweet paprika
3/4 teaspoon crushed red pepper flakes
Handful fresh basil, thinly sliced, for garnish
