Date and Nut Balls

Ingredients: 

1 Tablespoon honey
1 Tablesoon cacao or unsweetened cocoa powder
1/3 cup pitted medjool dates
1/4 teaspoon vanilla extract
1 pinch of sea salt
1 cup raw shelled nuts (walnuts, almonds, hazlenuts, pecans.


  1. Process nuts into a fine meal in a food processor.
  2. Add dates, vanilla, cocoa, honey and salt, then process again until the mixture forms a dought that holds together when squeezed between two finders.
  3. Rol the dough into balls or with a rolling pin, flatten it and cut into 1 inch thick squares.
  4. Store in refrigerator for up to a week or in the freezer for up to a month.
  5. When rolled into balls about the diameter of a quarter there are about 30 calories each with about a fram of protein.
