For the dough:
3 C ap flour
2 T sugar
¼ tsp salt
1 C (2 sticks) unsalted butter, cold, cut into cubes
2 eggs, whisked
2-3 T milk
1 C white sugar
6 T unsalted butter, at room temperature, cut into pieces
⅓ C heavy cream
1 tsp salt

For the caramel:
2 large apples, cored, peeled and small diced
2 tsp fresh lemon juice
1 T white sugar
1 T brown sugar
½ tsp cinnamon
⅛ tsp nutmeg
pinch of ground ginger
2 tsp cornstarch

For the egg wash:
1 egg, whisked with 1 tsp water
sugar for sprinkling
