Egg Fried Rice

Ingredients: 

2 cups uncooked white rice
Vegetable oil
3 eggs beaten with a pinch of salt & 2 tbs milk
1/2 cup frozen peas
1/2 cup corn kernels (can be frozen)
3 tbs soy sauce
1/2 cup chopped scallions
Sesame oil


  1. Cook rice according to package directions. Set aside
  2. Heat a small amount of oil in a small, heavy skillet. 
  3. Add small amount of egg mixture & swirl around. Flip onto plate when cooked. You will have a small pile of crepe-like pancakes  
  4. cut the pancakes into short, thin strips & set aside. 
  5. Heat a small amount of vegetable oil in heavy pan or wok. Stir fry peas & corn.
  6. add soy sauce & continue to stir fry. 
  7. Add scallions & egg strips. Season with a few drops of sesame oil. 
  8. Add cooked rice & mix until rice is brown. 
  9. Makes avoit 4 servings.
