1 piece dried ginger

1 whole nutmeg, grateds
1 teaspoon fennel seeds
1 cinnamon stick
1 teaspoon peppercorns
Olive oil, for drizzling
1 organic chicken spatchcocked or butterflied
Juice of 1 lemon
3 cloves garlic, crushed
3/4 pound large tomatoes
3 fresh green chillies, sliced lengthwise
Olive oil
Maldon sea salt
