Erin's Pumpkin Torte

Ingredients: 

Mix 1:
24 graham crackers (6 sheets crackers)
1/3 C sugar
1/2 C melted butter

Mix 2:
2 eggs, beaten
3/4 C sugar
8 oz package cream cheese

Mix 3:
2 C pumpkin
3 eggs (separate yolks and reserve whites)
1/2 C sugar
1/2 C milk
1/2 tsp salt
1 Tbsp cinnamon

1 packet plain gelatin
1 container Cool Whip


  1. Combine ingredients for Mix 1, and press into 9x13 pan
  2. Combine ingredients for Mix 2. Pour over crust and bake 20 min at 350. Let cool.
  3. Dissolve gelatin in 1/4 C cold water and set aside.
  4. Combine ingredients for Mix 3, cooking over low-med heat until thickened (about 5 min). Add dissolved gelatin to thickened mixture.
  5. Beat egg whites until stiff and add sugar. Fold into pumpkin mixture.
  6. Pour pumpkin mixture over cooled crust. Top with Cool Whip.
