Fajita Chilaquiles Casserole

Ingredients: 

8 (6inch) flour tortillas, cut into 1-inch strips
Cooking spray
1 tablespoon onion powder, palmful
1 tablespoon garlic powder, palmful
1 tablespoon cumin, palmful
1 teaspoon cinnamon, 1/3 palmful
1 tablespoon chili powder, palmful
1 teaspoon dried oregano, 1/3 palmful
1 1/2 lb sirloin steak, chicken breasts, or pork chops, thinly sliced
Salt and pepper
4 tablespoons cooking oil
1 Mexican beer
2 red peppers, seeded & thinly sliced
2 red onions, thinly sliced
3-4 garlic cloves, finely chopped or grated
1/4 cup chopped fresh cilantro or flat-leave parsley
2 limes
2 cups shredded pepper jack cheese
Sour cream for garnish
Salsa


Preheat oven to 400

Arrange tortilla strips on baking sheet with cooking spray bake until crispy about 7-8 minutes

Combine onion powder, garlic powder, cumin, cinnamon, chili powder, and oregano in a small bowl

Salt & pepper meat then evenly coat with rub

In a large skillet over high heat & 2 tbls oil sear & caramelize the meat then add the beer cook to reduce, 2 minutes

In another large skillet with 2 tbsp oil on high heat to brown peppers, onions and garlic for 3-4 minutes then add cilantro or parsley, juice of 1 lime salt and pepper toss to combine remove from heat

Combine meat, peppers and onions and tortilla strips into a casserole dish top with cheese place under broiler for 3 minutes

Garnish with the juice of the other lime, sour cream & salsa
