1 c of pearl barley
2 c water
dash salt
2 ripe plum tomatoes, chopped
1/4 c. chopped red onion
1 cucumber chopped
2 tsp minced garlic
1/4 c balsamic vinegar
bring water and salt to a boil, add barley and lower heat, simmer until desired tenderness, stirring occasionally. Add water if needed.
Combine chopped tomatoes, cucumber, onion, garlic and balsamic vinegar in a bowl, and place in refirgerator.
When barley is done, allow to cool slightly and add to vegetable mixture, allow it to set until cool. May be served room temp or cold. Even better the next day. Makes 8 servings
