4 medium fillets, (800g)
3 cups fresh ginger, sliced into thin matchsticks
2 tbs soy sauce
2 cloves fresh garlic, thinly sliced
1 tsp fresh ginger, finely grated
400g bok choy, (or a mixture with pak choy), trimmed
2 tbs oyster sauce
1 tbs sesame oil
