Fish - Spicy Coconut Shrimp with Quinoa

Ingredients: 

1 cup quinoa, rinsed
2 cups water
3/4 t salt

Shrimp
1 t olive oil
1 medium onion, chopped
1 T minced fresh fingerroot
1/2 t curry powder
1/2 t ground cumin
1/4 t salt
1/4 t cayenne pepper
1 lb uncooked shrimp 26-30 per lb peeled and deveined
2 cups fresh snow peas about 7 oz trimmed
3 T light coconut milk
1 T orange juice
1/4 cup coconut, toasted
1/4 cup fresh cilantro
