LC On the Side Note: We can think of quite a lot of sides that would go quite spectacularly with these subtly flavored five-spiced chops, including the obvious white rice. But really, just like Sinskey, all we crave is some made-from-scratch applesauce with caramely, appley, spicy overtones. Excuse us while we go make some.
4 to 6 T-bone pork chops (each about 3/4-inch thick)
2 teaspoons peeled and minced fresh ginger
2 large cloves garlic, very finely chopped (optional)
1 teaspoon five-spice powder
1 tablespoon extra-virgin olive oil
Kosher salt and freshly ground pepper
Vegetable oil for the grill rack
