Fluffy Pumpkin Pie

Ingredients: 

1/2 C sugar
1 envelope unflavored gelatin
1 t pumpkin pie spice (or 1/4 t cinnamon, nutmeg, ginger)
1/2 t salt
1 C milk
1 egg, slightly beaten
1 can pumpkin 16 oz
1 C cool whip (thawed)
1 9" graham cracker crust


  1. Combine sugar, gelatin, spece and salt in sauce pan
  2. Blend in milk
  3. Cook and stir over medium heat until sugar and gelatin are dissolved
  4. Gradually stir mixture into beaten egg
  5. Blend in pumpkin
  6. Chill until very thick
  7. Fold in the cool whip
  8. Spoon into pie shell
  9. Chill until firm, about 3 hrs
  10. Garnish with wreath of cool whip, chopped walnuts and raisins if desired
