Fragrant Chicken Curry

Ingredients: 

3 tbsp oil
1 onion chopped
2 garlic cloves, crushed
1 tbsp Thai red curry paste
4 cups coconut milk
2 lemon grass stalks coarsely chopped
6 kaffir lime leaves, chopped
2/3 cup plain Greek yogurt
2 tbsp apricot jam
3 pounds of cooked chicken
2 tbsp chopped fresh coriander
salt and black pepper


Directions

  1. heat oil in large pan
  2. add onion and garilc and cook over low heat for 5-10 minutes until soft
  3. stir in red curry paste
  4. cook stirring constantly for 2-3 minutes
  5. stir in coconut milk, then add lemon grass, lie leaves, yogurt, and apricot jam. stir well and cover and simmer for 30 min
  6. remove pan from heat and let cool slightly
  7. put sauce in food processor and process until smooth
  8. strain back into clean pan and set aside
  9. remove skin from the chicken and cut into bitesize peices then add to the sauce
  10. bring sauce back toa  simmer and stir in fresh coriander and add salt an pepper
  11. serve over rice
