Amount, Measure, Ingredient
2 avocados, cut up small
3 tomatoes, diced
1 bunch green onion (greens and whites sliced thin)
1/2 bunch cilantro - chopped small
1 can corn - shoepeg or nibblets
1 can (15 oz) black beans, preferably low sodium,
-- drained and rinsed
Dressing
1/4 cup rice vinegar
1/4 cup olive oil
3 cloves Garlic, minced
3/4 tsp salt
1/8 tsp pepper
1 tsp cumin
1. Cut and chop up everything
2. Toss with dressing
3. EAT!!!!!!
