1/2 c. panko breadcrumbs, toasted
1 c. freshly grated Parmesan
extra-virgin olive oil
1 lb. Brussels sprouts, trimmed and halved
1 1/2 lb. boneless, skinless chicken breast, cut in half
kosher salt
Freshly ground black pepper
2 tbsp. butter
3 garlic cloves, minced
1 onion, chopped
1 c. low-sodium chicken stock
1 tbsp. balsamic vinegar
1/4 c. chopped parsley
