Ginger Muffins

Notes: 

These freeze well.

Ingredients: 

3/4 cup flour
3/4 cup whole-wheat flour
3/4 tsp baking soda
1/2 tsp allspice
1/2 tsp cinnamon
1/4 tsp cloves
4 Tbs butter - room temperature
1/4 cup brown sugar - packed
1/2 cup molasses
1 lg egg
1/2 cup hot water


1. Sift flours, soda, and spices into a bowl.

2. With an electric mixer, beat butter and sugar

3. When creamy, add molasses and egg and beat until will blended

4. Add flour mixture and hot water and stir just until blended.

5. Fill muffin cups 2/3 full

6. Cook 10 min @ 375 deg

7. Cool 10 minutes before turning out
