1 whole Belgian endive
1 cup cooked quinoa
1 onion, chopped
1/2 cup pumpkin seeds
1/2 cup walnuts
3 cloves garlic, chopped
1-2 tablespoons shaved ginger root
2 tablespoons rice vinegar
2 tablespoons soy sauce
1/4 teaspoon crushed red pepper
1/4 teaspoon cumin
1 tablespoon brown sugar
1 large carrot, shredded
3 green onions sliced lengthwise
