Gluten Free Healthy No Bake Brownie Bites

Ingredients: 

1 cup Medjool dates, pits removed (about 1 cup)
½ cup sunflower seed meal (from toasted sunflower seeds)
4 Tablespoons unsweetened cocoa powder
2 Tablespoons coconut oil
1 Tablespoon honey (or other liquid sugar like pure maple syrup or agave nectar)
1 teaspoon pure vanilla extract
Pinch of salt
Additional sunflower seed meal, nuts, shredded coconut, gluten-free cookie crumbs, etc. – optional but all possibilities for rolling brownie bites in, if desired.
