Grandma Elzerman's butter cookies


1 cup of butter
1 cup of sugar
2 egg yolks
3 cups of flour
Egg whites

Cream the butter and sugar. Blend in egg yolk. Slowly add flour. Wrap and refrigerate overnight. Make balls about the size of a walnut. Press flat with a glass and plastic doily. Place on ungreased cookie sheet, just before placing in the oven brush tops with lightly beaten egg white. Bake for 12 minutes in a 375° oven. Remove from oven as soon as they are slightly brown.
