Get Started - 100% free to try - join in 30 secondsThis has been a favorite in our family all my life and I'm sure even before I was born. Grandma's soup was such a staple when she was alive. She never wrote the recipe down, but I've tried to copy it as best I could.
2 large cans chicken broth
1 Rotisserie chicken (Grandma used beef, but I prefer chicken)
1 Can tomatoes
1 Can corn
1 Can green beans
3 Carrots
2 Potatoes
1 Small onion
Chicken bouillon cubes, to taste
Peppers in vinegar, to taste
Salt and pepper, to taste
Pour both cans of broth into large pot and begin heating on high. Pull chicken from bone and add to broth. Cut carrots, potatoes and onion into bite size pieces and add to pot. Next add tomatoes and corn. Add vinegar, salt and pepper, to taste. If needed, add bouillon cubes. Let boil until vegetables are tender. Add green beans last so they don’t overcook. Serve with saltine crackers.
