Granola

Ingredients: 

5 c. oatmeal
2 c. Nuts (chopped rough)
or 1 1/2 c. nuts and 1/2 cups of coconut

1/3 c. brown sugar
1/3 c. maple syrup (or agave syrup or honey)
1 T vanilla
1/2 t salt
1/2 c. canola oil
2 c. dried fruit


Mix first two ingredients together.

Combine all the rest of the ingredients except fruit.

Combine wet and dry ingredients and mix well.

Line cookie sheet pan with parchement paper

Spread mixture on pan, pressing in well.

Bake at 325° oven for 20 minutes on low rack

Move to upper rack and bake for 20 more minutes, watching carefully to avoid burning.

Remove from oven and add dried fruit.
