Grated Beet Salad With Citrus Herb Dressing

Ingredients: 

1/4 cup (50 mL) fresh orange juice
3 tbsp (50 mL) olive oil
1 tsp (5 mL) of grated orange zest and fresh lemon juice
1 tsp (5 mL) Ontario liquid Honey
1 tsp (5 mL) Dijon mustard
Salt and pepper to taste
3 peeled and finely grated raw Ontario Beets
1 tbsp (15 mL) mixed chopped fresh herbs such as parsley, tarragon, chervil and chives


  1. Whisk together 1/4 cup (50 mL) fresh orange juice, 3 tbsp (50 mL) olive oil, 1 tsp (5 mL) each grated orange zest, lemon juice, liquid Ontario Honey and Dijon mustard, and salt and pepper to taste.
  2. Stir into 3 peeled and finely grated raw Ontario Beets to coat evenly.
  3. Add 1 tbsp (15 mL) mixed chopped fresh herbs such as parsley, tarragon, chervil and chives
