Green Beans Almondine

Ingredients: 

2 lbs green beans
Salt
2-4 tbs butter or olive oil


  1. Bring a large pot of salted water to a boil
  2. Trim the stem ends of beans & snap in half, if desired. 
  3. Add beans to the boiling water & cook until just tender, 5-10 minutes. 
  4. Drain beans in a colander, shake off excess water. 
  5. Transfer beans to a large bowl filled with ice water. 
  6. Swiss the beans around. Empty the water as it becomes warm & replenish it with cold water. Repeat until the beans are no longer warm. 
  7. Drain the beans again & pat dry. You can wrap the beans in a few layers of paper toweling & refrigerate for a few hours, if you want. 
  8. Ready to serve: Heat the butter or oil in a large skillet over medium heat & add the almonds. 
  9. Toss the almonds in butter just until they start to color. 
  10. Add the beans. Turn up the heat & sauté, stirring constantly, until the beans are well coated & hot. 
  11. Makes 6-8 servings.
