Green Rice

Ingredients: 

1 packed cup of fresh cilantro leaves
1/2 packed cup fresh parsley leaves
1/4 cup white onion, chopped
1 garlic clove, chopped
1 3/3 cups water
salt and ground pepper
1 teaspoon extra-virgin olive oil
1 cup long grain white rice
1 tablespoon fresh lime juice


  1. In a blender, combine cilantro, parsley, white onion, garlic, water.
  2. Season with coarse salt and ground pepper.
  3. Blend until smooth, about 15 seconds.
  4. In a medium saucepan, heat 1 teaspoon extra-virgin olive oil over medium-high heat.
  5. Add long grain white rice and stir to coat with oil.
  6. Add herb mix and bring to a boil.
  7. Reduce to simmer, cover, and cook until the water is absorbed, about 15 minutes.
  8. Remove pan from the heat and let sit, covered 5 minutes.
  9. Add 1 tablespoon of fresh lime juice.
  10. Fluff with a fork.
