Grilled Roasted Corn Salad

Notes: 

Prep this early, lots of chopping, I used frozen corn when corn was out of season still tasted good

Ingredients: 

8 ears of fresh corn on the cob
1 red bell pepper chopped
1 cup grape tomatoes
2 cups fresh green beans ends removed cut into 1" pieces
1 cup fresh parsley chopped
1 large jalapeno pepper seeded and very finely chopped
Juice of 1 lime
1 tsp himalayan salt
1/2 tsp freshly cracked black pepper
75 g unripened goat cheese crumbled
1/2 cup walnuts (optional)


  1. Preheat grill to high heat
  2. place ears of corn in husks on grill, remove silk to keep from burning
  3. close the lid and cook the corn for about 20 min, rotating ears every 3-5 min to ensure cooking evenly on all sides
  4. Remove corn from the grill and allow to cool for about 10 mijnutes then remove husks
  5. Remove kernels from te cobs and place in the fridge to cool completely (freezer if you need to do it fast)
  6. when corn is cold add it to the mixing bowl along with the rest of the ingredients, blend to combine
  7. serve immediately or leave in the fridge for a couple hours to combine flavors
