Grilled Shrimp & Pineapple Skewers

20-25 medium sized shrimp, tail-off (about 1 lb.)
3 1/2 cups chopped pineapple
1 medium red onion, cut into large chunks
2 cloves garlic
1/2 jalapeƱo (seeds discarded)
the juice of 1/2 lime
3 tablespoons honey
1 tablespoon rice wine vinegar
1 tablespoon sriracha
2 teaspoons vegetable oil
1 teaspoon fish sauce
salt & pepper
coconut oil cooking spray, for grill
chopped cilantro, for serving
