Grilled Sweet Potatoes

Ingredients: 

2 medium, unpeeled sweet potatoes
2 tbsp olive oil
1/2 tsp kosher salt
1/2 tsp ground pepper
Dressing: whisk all together
2 tbs fresh lime juice
2 tbsp minced cilantro
1 1/2 tbsp extra-virgin olive oil
1 small minced garlic clove
1/2 tsp agave nectar
1/4 tsp salt


  1. Place sweet potatoes in a large pot of water, & boil about 20 minutes, until they are just cooked through. Transfer to a cutting board & let rest until cool enough to handle. 
  2. lightly grease the grill, & preheat to high heat. 
  3. When potatoes are cool enough to handle, slice into 1/4 inch rounds. Brush both sides with olive oil, & season with salt & pepper. 
  4. Place potatoes on the grill & cook about 2 1/2 minutes per side, until they have browned grill marks. 
  5. Transfer to a serving platter & drizzle with the dressing.
