Ham and Cheese Quiche

Preheat oven to 375 degrees for pre-conditioning pie shells.  (just bake them for 8-10 minutes to crisp up the bottom so it won't get soggy)

1 - 9" pie shell, pre-conditioned and set aside to cool.  Re-set oven to 350 degrees to bake all the pie crusts filled with quiche mixture.

Mix together:  1 Tablespoon minced onion

                     1 cup grated Swiss Cheese

                     5 eggs lightly beaten

                     1 cup heavy cream, or can use whole or 2% milk

                     1/2 tsp. salt

                     1/4 tsp. cayenne pepper

                     1/4 tsp.black pepper

                     1/4 tsp. nutmeg (very important to taste, don't leave out)

In cooled pie shell, chop small amount of deli-sliced ham in bottom to cover, then pour egg mixture on top.  Cook 30-35 minutes, if baking 2 pies together or more add more time...maybe up to 55 to 60 minutes to get firm, and golden brown on top.  Check with knife until it comes out clean.  You could bake these the night before to be sure of timing and just warm them up in a warm  oven for about 10 to 15 minutes that morning.
