Healing Soup

I found this recipe on a news page and saved it. Thank goodness I did as I could not find it later on the internet. So this is why I try to print out so many recipes.
This soup will help keep your immune system strong and prevent colds.
It has a lot of garlic and you can adjust according to your liking.
Also instead of kale you can use cabbage.
I have also used lentils in place of quinoa, but the time must be adjusted as it takes longer to cook lentils.
If you don't have chicken, no worries as it's good without it and the quinoa has a lot of protein.

Ingredients: 

2 tablespoons olive oil
1 1/2 cups chopped carrots
1 cup chopped celery with tops or more
1 cup chopped onions or more
4 cups water
1/2 head of garlic or more
6 cups chicken broth
1 rotisserie chicken (to save time) or cook your own
1/2 cup quinoa (rinse before adding)
2 tablespoons fresh ginger chopped fine
1/2 cup chopped flat parsley
1 cup chopped kale (about 4 large leaves)
1 to 2 tablespoons vinegar
1 teaspoon black pepper
1 teaspoon salt


  1. In a large pot, heat olive oil over meduim heat.
  2. Add carrots, celery, onions and garlic. Saute 4 minutes.
  3. Stir in water and chicken broth. Bring to a boil.
  4. Toss in chopped chicken, parsley, kale, quinoa, ginger, vinegar, and salt and pepper. 
  5. Cover the pan, reduce heat to low and cook for 20 minutes.
