1/2 cup finely shredded sharp cheddar cheese
1/2 cup grated fresh Parmesan cheese, divided
1/2 tsp salt
1/8 tsp fresh ground pepper
3 tbsp Panko bread crumbs
1 tbsp minced fresh flat-leaf parsley
Salt and Pepper to taste (for chicken)

Quick note: I forgot to note we tweaked this slightly and added some milk to the cheese sauce, as well as extra cheddar cheese. Everything we added, we eyeballed, so adjust as you see fit!
